Bioactive Edible Films and Coatings Based in Gums and Starch: Phenolic Enrichment and Foods Application

چکیده

Edible films and coatings allow preserving fresh processed food, maintaining quality, preventing microbial contamination and/or oxidation reactions increasing the shelf life of food products. The structural matrix edible is mainly constituted by proteins, lipids or polysaccharides. However, it possible to increase bioactive potential these polymeric matrices adding phenolic compounds obtained from plant extracts. Phenolic are known possess several biological properties such as antioxidant antimicrobial properties. Incorporating enriched extracts in contribute spoilage/deterioration extension life. This review focused on based gums starch. Special attention given incorporating compounds.
